Today I’m sharing one of my summer time saving, multi-purpose dinner solutions… shredded chicken.
Whether you cook the chicken yourself or buy a pre-made Rotisserie chicken (my personal favorite and Costco is the best place to buy them cheaply too!) you can usually get 2-3 meals out of the shredded chicken. And the leftover shredded chicken freezes beautifully as well too, just place the desired portion into a small freezer bag. During the winter I use the frozen chicken in soups or casseroles, no need to even thaw it out just through it right into the pot!
Shredded chicken is so versitle and can easily be used to swap out meat in some of your other family favorite meals. What I love about using shredded chicken during the summer is that it usually requires very little prep work on my end (which is always a plus) and results in several low-to-no cook meal options.
